With all the fruit and veggies coming through, the start of spring is a great time of year for restaurants and chefs alike. New season asparagus is so amazing, you don’t even need to snap it. Cherry tomatoes are almost as sweet as strawberries while beautiful spring lamb is starting to appear in my kitchen. With summer on the horizon, this is a great time for us to be lightening up our menus.

With great quality asparagus available at amazing prices during this time of the year and not wanting to waste all the trimmings left over from morning prep, I’ve been saving them up and throwing it in my morning smoothies. It’s a super quick-and-easy way to cram extra vitamins into your morning breakfast rush. For the party animals out there, the minerals and amino acids in asparagus not only protect the liver against toxins, but can also help to get rid of a hangover.

Ingredients aside, loads of new names and new menus have been sprouting up all over the city – which is great news for chef types like me and intrepid foodies. Brisbane is seriously establishing itself on the global food map. All our favourite newbies and old faithfuls can carry on doing what they do best, but it relies on you. Sadly we don’t all have a rock star salary to blow, but just by grabbing coffee or a sandwich from the many cafés and eateries around, means you can do your bit – and your taste buds will thank you. Having been in the industry for ten years, I know the passion and hard work that goes into making something that you are proud of, and the best part is watching someone enjoy it. As someone who loves eating as much as I like cooking, I spend my days off walking around Brisbane, selflessly doing my bit for the happiness of our passionate hard-workers. That’s a cause we can all get behind!

MORNING HERO SPRING SMOOTHIE

  • 200g fresh orange juice
  • 3 whole spears of asparagus or a handful of asparagus trim
  • 100g pineapple
  • 50g blueberries
  • A handful of fresh Queensland strawberries

Throw it all in the blender and let it rip!
