The Stores Grocer in West End has been joined by butcher and chef Dylan Seager.

Dylan is a qualified butcher with over 15 years of experience, as well as being a qualified fine dining chef. He was Head Butcher at Meatsmith Specialty Butcher and Wine Merchant in Melbourne and has also cooked in some of the best restaurants in the country: Marion, Stokehouse and Moon Under Water in Melbourne, and Gerard’s Bistro and Gauge in Brisbane.

Dylan is passionate about people supporting their local, independent butcher: “Support your local butcher! By shopping with us, you cut out the middleman, reduce food miles, and find a quality, flavour and freshness you just can’t get in a supermarket.”

Dylan heads a team of expert butchers who can guide you through the provenance and flavour of every cut and how best to cook it, and they work with The Stores’ chefs to use all the great components they have at hand to create a delicious variety of ready-to-eat and ready-to-cook meals, made with chicken, pork, lamb, beef and seafood, all on the premises.

The sausages are made in-store, in unique combinations: beef, pink peppercorn and burnt onion, smoky wagyu, Moroccan lamb and many more…

The butchers also have their own smoker for chicken and salmon, and they age whole joints of Sirloin, T-Bone and Rib on the bone in an aging cabinet for six weeks to impart a rich flavour and eye-fillet levels of tenderness, whatever the cut. They also purvey over the seafood, creating their own beetroot-cured salmon and smoked salmon. All the seafood is fresh not frozen, including the freshest local reef fish whole or filleted.

The Stores has an ever-growing library of recipes available on their website with suggestions for some of the hundreds of distinct locally made or grown grocery lines. At the deli you’ll find smallgoods from local artisans as well as the iconic European suppliers, the very best handmade cheeses from all over the world in the fromagerie room, and a tremendous range of local and imported charcuterie. Gluten-free, vegan and vegetarian options are covered with loads of quality options from soups to sauces, condiments, curries and cakes. For lovers of all things coffee, The Stores Espresso is a must.
