“We wanted to create a fully immersive experience—from the neon-lit ambiance to the smoky aroma of yakitori grilling over an open flame,” says Solotel CEO Elliot Solomon. “It’s about capturing the unpredictability and excitement of Tokyo and bringing it to Brisbane.”

Helming the kitchen is Chef Sean Barogo, a culinary master with over 22 years of experience in top Japanese kitchens worldwide. Working alongside Solotel’s Group Executive Chef Hamish Ingham, he’s crafted a menu that puts a creative spin on traditional Japanese flavors.
