Fortitude Valley’s favourite late-night Italian dining destination, Eterna, has introduced a new exclusive weekly dining experience inspired by Italy’s regional cuisine from Rome to the Amalfi Coast.

Devised and delivered partially tableside by Eterna’s head chef Francesco Vitagliano, the $65 two-course Chef’s Table dinner features premium Australian seafood paired with quintessential Italian flavours.

“The Chef’s Table menu has been designed to give guests an immersive sensory experience and insight into all the action in the kitchen,” says Francesco, who hails originally from Naples and worked in many of Rome’s top restaurants and osterias before joining the Eterna/Salt Meats Cheese/La Costa group in 2018.

“This is a great experience for not only the guests but for myself, as it allows me to interact with them and share my inspiration behind these particular signature dishes, origins and cooking techniques.”

 Shining a spotlight on local seafood, the menu kicks off with Mooloolaba prawns served tartare-style with baby Roma tomatoes, burrata cheese, a citrus emulsion, pistachio and a striking squid ink tuille.

The second course plates up wild-caught Northern Territory tropical rock lobster finished with a striking tableside flambé before being served alongside house-made spaghetti with cherry tomatoes, parsley, lemon zest and bottarga in a luxurious seafood bisque that’s been reduced for a whole 24 hours!

Both courses also have a suggested wine and cocktail pairing from Eterna’s bar team, including a lively Borgoletto Soave to pair with the prawn tartare, or a Margarita Fumé (with Don Julio Blanco, mezcal, agave, lime and Tajín salt) for the spaghetti.

The Chef’s Table menu is available to limited guests every Tuesday-Thursday, so bookings via Eterna’s website are strongly recommended.
