Inspired by the pastels and Palm Springs, a new watering hole is opening up in Fortitude Valley taking up residence within everyone’s favourite Woolly Mammoth. With plans to launch on Thursday August 22, Ivory Tusk will see a full makeover over the bar’s Mane Stage and Garden Terrace into a tropical-themed oasis.
Open from Wednesday to Sunday, guests can enjoy #tuskstyle eats, beats and cocktails, with 3 separate bar areas all serving eight, rotating cocktails on tap using only premium spirits, fresh ingredients and botanicals plus, a range of craft beers. The existing Garden Terrace will be transformed into a tequila-focused light-filled space complete with trendy pendants and a decorative stencilled terrazzo floor.
The new menu curated by Graeme McKinnin (formerly Covent Garden, West End) and head chef Jack Thompson (The Line & Label, Port Lincoln) will see a line-up of Mexican eats with a touch of flair. Think gazpacho tequila shooters, lamb barbacoa and mouth-watering roast post with plenty of vegan-friendly and gluten-free options. And yes, you can expect it to change seasonally!
While Ivory Tusk does share the same address as Woolly Mammoth, you can rest assured knowing that it’s famous Mane Stage music events and late-night shenanigans will not be going anywhere. Remaining on the upstairs level, it’s also been injected with hints of Tropicali style.
Entertainment will continue to flow through the site with regular DJs and live bands using their state of the art sound and light system. Ivory Tusk will also be hosting regular ‘Rockaoke’ where guests can sing their favourite songs backed by a live band.
Get ready to party from Tusk ‘til dawn.
